refreshing cold cucumber soup

cucumbers mainly consist of water, so they deliver the needed liquids we need on hot days like today. combined with cooling yoghurt (dill and garlic of course have to make an appearance as well) it is the perfect little snack or with feta and some roasted bread a light summer lunch. when using the speedy boy and shake it, the cold Cucumber Soup is made in minutes – without using any electronic devices.

ingredients (1 portion)

  • 1/2 cucumber
  • 2 twigs dill
  • 1 clove of garlic
  • 1,5 tbsp sour cream
  • 3-4 tbsp yoghurt
  • some salt

cut the cucumber lenghtwise in half and with a spoon remove the soft pits (otherwise it is too liquid). cut into rough pieces. with the dill and garlic chop in speedy boy until you almost have a purée (i like it when there are still some pieces in the soup).

shake the cucumber purée together with the sour cream, yoghurt and salt to your liking in the shake it until you get a creamy, fluffy soup. pour into a bowl, maybe serve with some feta and bread.
