cheesecake crumble muffins

i’m baking quite frequently, but it feels like ages that i tried a new recipe. i was rather craving some of the classics like marble cake, egg liqueur cake, brownies etc. however since i wanted to post something new for you guys, i “forced” myself to try out something different. the decision fell on cheesecake crumble muffins – a combination of some of my favorites. besides it is high season for fresh fruits right now – i used peaches (skinned), but you can also use apricots, nectarines, the last strawberries, blueberries, cherries and and and. in fall/winter you can fall back on canned fruits. if you’d rather have a not so chocolatey version (but who would want that??), substitute the cocoa with flour. also make the double amount of crumble so you have something for a rainy day. freeze them what’s left over and if you have a craving for something sweet, put some fruits in a baking pan, add some sugar, sprinkle generously with frozen crumbles and bake in hot oven – soooo yummy.

ingredients (12 pieces)

chocolate crumbles

  • 150 g flour
  • 50 g cocoa powder
  • 100 g sugar
  • 100 g cold butter
  • 1 pinch of salt

cheesecake muffins

  • 200 g peaches (skinned, or other fruits to your liking or canned ones)
  • 40 g flour
  • 50 g sugar
  • 1 package vanilla sugar (or 1 tbsp homemade one)
  • grated peel of 1 (organic) lemon
  • 500 g curd (creamy)
  • 2 eggs

for the crumble mix all ingredients plus 2 tbsp cold water and either with your hands, food processor or handheld mixer with doughhook quickly knead them into crumbles. place in fridge for 30 minl.

preheat oven to 180°. line a muffin tray with paper forms. prepare fruits – skin, cut into pieces, let drain canned fruits.

stir curd, eggs and lemon peel together until smooth. mix flour, sugar and vanilla sugar and then fold into curd mixture.

spread half of the crumbles onto muffin molds, slightly press tight. distribute the cheesecake mixture, spread peaches on it and top off with rest of crumbles.

bake in hot oven on middle rack for 40 min. let cool down on a cooling rack.
