homemade bounty

i was looking through my recipe folder, since i always am busy keeping recipes out of the different magazines, but than they usally disappear in my folder and aren’t seeing the light of day again. to get some inspiration i’m leaving through them every once in a while. that’s when i came upon this recipe for homemade bounty. since you’re never wrong with Coconut and chocolate, i instantly wanted to make them. unfortunately i didn’t have enough desiccated coconut at home, so i had to postpone. the next night, monday, i was still pretty motivated after my yoga class, i quickly bought the missing ingredients and made my way into the kitchen. since we had a meeting with the whole project team the next day (you can easily count with about 30 people) i doubled the recipe. so i probably had about 1 kilo of coconut bars with me in the office, nonetheless they were gone pretty fast. only the last piece remained, which 1 colleague was brave enough to eat 2 days later the bars are also a pretty neat little present, especially now to get some summer feeling going.

ingredients (about 16 pieces)

  • 200 ml coconut milk
  • 60 g butter
  • 2 tbsp sugar
  • 200 g desiccated coconut
  • 220 g chocolate
  • 1 tbsp coconut oil

in a pot bring coconut milk with butter and sugar to a boil, remove from stove. set aside 1 tbsp desiccated coconut and add the rest to the hot milk mixture. let cool down completely.

place the coconut mix on a sheet of baking paper and with oiled hands form into a 20 x 15 cm rectangle. press firmly into place. with a knife cut the plate in lengthwise in half and then cut into 2,5 cm broad bars. place in freezer for 1 hour.

melt chocolate with coconut oil in a bain marie – make sure the chocolate doesn’t get too hot. using 2 forks dunk the frozen coconut bars one after another into the chocolate . place on a fresh sheet of baking paper, sprinkle with coconut and let set. best store in airtight container or give away wrapped in baking paper.
