This past Saturday we catered the annual Church Banquet for the folks at Lighthouse Bible Church.

We served 300 people very quickly and efficiently and a really good time was had by all. Due to the generous catering numbers set by church management there was lots of food and many folks returned for second and third helpings!

Lighthouse requested a variation of our festive Hawaiian Luau menu and we served the following:-

Kalua Pork – Tender, shredded pork slowly roasted to a flavorful finish
Rotisserie Roasted Teriyaki Chicken
Tropical Rice – Fluffy rice simmered in a flavorful broth with braised pineapple and a splash of teriyaki sauce
Stir-Fry Wok’d Vegetables
Mandarin Orange Tossed Salad – Mixed greens & spinach with cherry tomatoes, cabbage, mandarin oranges, fried won noodles, tossed with a toasted sesame dressing
Polynesian Fresh Fruit Salad
Sweet Hawaiian Rolls
And of course, the piece de resistance – whole rotisserie pig

After finding out they we also specialize in whole rotisserie lamb we wonder if it’s going to be as long as another full year before we hear from them again!!
