Chicken – Fresh chicken breast sliced into thin strips is perfect for making chicken fajita meat. You can also save time by purchasing pre-cooked chicken fajita meat and simply heat it up for this recipe!

Garlic/Onion – I used freshly minced garlic and a yellow onion (thinly sliced) for this recipe.

Bell Peppers – Any type of bell pepper works great!

Seasoning – A mix of chili powder, smoked paprika, cumin, salt, and pepper give the chicken and vegetables that smoky fajita flavor that we all love! Feel free to adjust the amount of salt and pepper (and really all of the seasoning) to your own taste.

Salsa – The secret ingredients for the best Chicken Fajita Tacos? SALSA! Add it in while you cook the meat and vegetables to add moisture and the perfect flavor!

Corn Tortillas – White or yellow corn tortillas work great in this recipe.

Ingredients

Chicken Fajita Tacos

  • 8 corn tortillas
  • 2 Tablespoons avocado oil (divided)
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 medium chicken breasts, sliced into strips
  • 2 Tablespoon salsa (divided)
  • 1 teaspoon minced garlic
  • 1/2 medium yellow onion, sliced
  • 2 medium bell peppers, sliced
  • 1/2 cup fresh cilantro leaves (optional, for topping)
  • 1/2 medium lime, quartered (optional)

Cream Sauce (Optional)

  • 3 Tablespoons plain whole milk yogurt (or sour cream)
  • 1/2 teaspoon salt
  • 1-2 Tablespoons water

Instructions

  1. Heat the tortillas up in a pan or directly over the stove and set aside.
  2. Mix the chili powder, smoked paprika, cumin, salt, and pepper together in a small bowl.
  3. Slice the chicken breasts into thin strips.
  4. Heat up 1 Tablespoon of the avocado oil in a skillet or pan.
  5. Place the chicken in the pan along with 1/2 of the seasoning mix and 1 Tablespoon of the salsa.
  6. Cook for about 10 minutes, flipping halfway through and stirring as needed until fully cooked.
  7. Set the chicken aside.
  8. Add the remaining oil along with the garlic and sliced onion to the pan, then cook for 2-3 minutes.
  9. Add in the sliced bell peppers, remaining seasoning mix, and remaining salsa.
  10. Continue to cook for about 10 minutes, stirring often, until the vegetables are soft.
  11. Add the chicken back in and stir until evenly warm.
  12. Remove from heat and fill each tortilla with the chicken fajita mixture.
  13. Mix the cream sauce together (optional).
  14. Top each chicken fajita taco with cream sauce, cilantro, and a squeeze of fresh lime juice!
