I often make Breakfast Muffins often at home as they are easy to make, look colourful and are also healthy. Sharing this super easy recipe here. Do try them out and I am sure you will like it.
Makes: 6 muffins
Ingredients
2 eggs
2 slices of whole wheat bread
1 cup milk
½ tsp salt
½ tsp pepper powder
½ tsp red chilli powder
1 small onion finely chopped
1 tomato finely chopped and deseeded
½ cup boiled corn
½ cup chopped coriander leaves
¼ cup grated cheese
Method
- Switch on the oven and allow it to preheat at 180 degrees Celsius for 10 minutes.
- While the oven is getting heated, take a bowl, add eggs and beat well till the whites and yolks are well mixed.
- Add salt, red chilli powder, pepper powder and mix well.
- Add chopped onions, tomatoes, corn and coriander leaves and mix well.
- Now tear the bread into small pieces and add this along with milk to the bowl.
- Transfer the batter to 6 silicon moulds , add cheese on top and place the moulds on a baking tray.
- Place the tray inside the oven and bake at 180 degree Celsius for 15 to 20 minutes.
- Carefully take out the tray and garnish with tomatoes, corn and coriander leaves.
- Serve hot with tomato ketchup.
I also made a variation to these muffins by adding cooked maggi noodles to the muffin batter and the maggi breakfast muffins too tasted delicious.
