I've wanted to make Raymond Blanc's Buche de Noel last year, but it was so hectic that I didn't at the end. This year however, because of a review opportunity for Clement Faugier's Chestnut Spread, I finally get to make his Buche de Noel (a simplified version), and it was such a delight that it was devoured in no time!




Raymond Blanc included a Chestnut Buttercream recipe for his Buche de Noel, but because the Clement Faugier's Chestnut Spread is so delicious (you can spread it on a toast or sandwhich, it's really yummy!), I think it'll be perfect for the Buche de Noel, so I mixed it with whipped cream to make the filling.



I'm so glad that I made this Chestnut Yule Log Cake! The cake itself is really light and fluffy, because it contains minimum amount of flour, and no raising agent either (it's all about the eggs!). The lightly whipped cream added a really dreamy texture to the whole cake, making it really easy (dangerously easy!) to eat. I also bought ready boiled chestnuts from Costco, which doesn't contain anything inside apart from peeled and boiled chestnuts! They aren't candied so doesn't keep well, but I think candied chestnuts would have overpowered the flavour in this lighter version.

We made 2 Buche de Noels out of Raymond Blanc's recipe, and decided to share the other one with our neighbour (we have a whole Christmas binge eating period on the way so it's better to share haha). We hope they like it too!


I'm so glad to have discovered Clement Faugier's Chestnut Spread! And you can eat it on its own as a spread, or mix it with butter or cream to make a filling for cakes. It's safe to say that I'll definitely buy it again!
