Exotic Vegetable Soup

The chilled weather certainly makes us crave for something warm! What’s better than a delicious bowl of soup in these winters? Here is a soup made of broccoli and bell peppers that will warm up your taste buds with its deliciousness. Bonus : It’s low in calories and dense in nutrients.

Ingredients :
1 cup Broccoli
1 cup Cauliflower
1 cup Carrots
3 Tomatoes
1/2 of a Red/Yellow/Green Bell Pepper (any one or a mix of all
For tempering : 
2 cloves
4 To 6 whole black pepper corns
3 to 4 pieces of Garlic
1 green chilly
1 tsp cold pressed oil (Olive or Coconut is preferable)
Method :
Chop Broccoli and Cauliflower into slightly big florets. Thickly slice carrots. Chop tomatoes into big pieces. Steam  (do NOT boil) the Broccoli, Cauliflower and Carrots for 5 mins. Add tomatoes to the steamer. Steam for 2 to 4 mins more. Remove the vegetables from heat and transfer to another vessel to avoid over-cooking. Keep aside and let it cool.
In a small skillet , heat a tsp of Oil, Add garlic, chopped bell pepper, Green chilies, cloves and black pepper. Saute till capsicum is semi cooked. Remove from heat. Add to the vegetables mixture and blend in a mixer until smooth. Add salt and water as per requirement. Pour in a Vessel and heat for a minute or two.Garnish with coriander. Serve hot.
P.S. : If you hate broccoli , I bet you will start loving it after having this soup.

Preparation time : 10 to 12 mins
Cooking time : 15 mins
