4 veggie burgers for meatless Mondays

Vegetable burgers can be a great option for meatless Mondays. Of course, the ideal is to prepare them at home, to really control what ingredients we use (there is everything in the market). Legumes, cereals, textured soybeans... We can make all kinds of vegetable burgers, and very simply. If you have never prepared a vegetable burger at home, we encourage you to do so and for this we bring you 4 delicious ideas.

LENTIL BURGERS

Ingredients

  • 500 grams of lentils
  • 1 carrot
  • 4-5 wild asparagus spears
  • 1 small tray of thistle mushrooms
  • 1 scallion
  • 2 cloves of garlic
  • A handful of natural pistachios
  • Salt and black pepper to taste
  • Chickpea flour for consistency

Instrucctions

  1. Prepare the lentils as usual (or used canned lentils) and drain them well.
  2. Sauté the vegetables (carrot, asparagus, onion, garlic, thistle mushrooms). Once cooked, drain them well.
  3. Chop the lentils and vegetables well (or chop the vegetables finely but without blending them, as preferred).
  4. Add the pistachios, chopped, a little chickpea flour (or any flour) to give consistency (about 4 teaspoons or so) and form them into a burger shape.

CHICKPEA BURGERS:

Ingredients

  • 400 grams of chickpeas
  • One packet of spinach
  • 1 onion
  • A handful of chopped walnuts
  • Garlic, salt, paprika (sweet or spicy) and black pepper to taste.

Instrucctions

  1. Cook the spinach and drain well.
  2. Cook the chickpeas, drain them and crush them with a fork.
  3. Sauté the onion, add the spinach, garlic, salt, paprika and pepper
  4. Add the chickpeas and walnuts.
  5. Mix well, remove from heat and wait until it cools to shape the burgers. It may be necessary to add some chickpea flour to give it some consistency.

TEXTURISED SOYBEAN BURGERS.

Ingredients

  • Texturised soybeans
  • One tray of mushrooms
  • Red, green and yellow pepper (one of each)
  • 1 Spanish onion,
  • 1 egg
  • Bread crumbs
  • Salt and black pepper

Instrucctions

  1. Soak textured soybeans in water for half an hour. Drain well.
  2. Sauté the vegetables, add the salt and pepper, drain, add the textured soy, add the beaten egg and the breadcrumbs (the latter until the dough acquires consistency to form a burger).

BUCKWHEAT BURGERS:

Ingredients

  • 1 cup of buckwheat
  • 1 tray of champignons or mushrooms
  • A couple of broccoli florets
  • 1 Spanish onion
  • 1 clove of garlic
  • Salt and black pepper to taste

Instrucctions

  1. Soak buckwheat for a minimum of 12 hours.
  2. Drain it and blend it in a blender.
  3. Sauté the well-chopped vegetables (mushrooms, broccoli and onion), add salt and pepper to taste, drain it, add it to the buckwheat, shape the burgers and you're done!
  In addition to these ideas, we can prepare many other vegetable burgers, varying the legumes or cereals to taste. We can also give the masses the shape of meatballs and add them to a Spanish sauce. So we vary a bit in the kitchen, always with healthy options that, in addition, we can freeze. As you can see, they are easy to make and very nutritious dishes! And although we can eat any of these hamburgers (or meatballs) any day of the week, they are options to keep in mind for meatless Mondays.
