Banana Walnut Cake

Our followers out there may have noticed that I use bananas in my cakes a lot in place of sugars. In order to do this I have to hide a couple a week from the kids. This week however, it’s been so consistently warm two of them went black before the kids could eat them.
I’ve been working a bit lately and am feeling guilty for not baking them special treats and breakfasts like I usually do, so this afternoon while Louis slept and Leon played, Demi and I baked.
The following is our basic banana cake/muffin/bread recipe that can be altered and added to however you want the direction of the flavours to go.
This is just a great base recipe to have on hand, that’s delicious as is. Sweet and moist, with an walnut crunch going through the entire cake, the addition of oats makes this versatile as either a breakfast or afternoon tea. Definitely worth trying if you’re a lover of banana bread.

Banana Walnut Cake
Ingredients
1 cup of wholemeal plain flour
1 cup of rolled oats
2 small or 1 large banana
1 cup of raw unsalted walnuts
2 tsps of baking powder
1 tsp of vanilla extract
1 tbls of raw honey
1/2 a cup of full cream milk
1/2 a cup of extra virgin olive oil
2 eggs

Method
1. Preheat the oven to 200°c.
2. Mash the bananas up using the back of a fork.
3. Crush the walnuts to your desired size. I just crack them between my thumb and index finger, how they snap is how they stay.
3. In a large mixing bowl add all the ingredients and mix well until a wet batter forms. By hand or machine will work fine.

4. Grease and line a 23cm springform pan and pour the batter in. The oats will become invisible once the cake is cooked.

5. Bake for 20-25 minutes or until a toothpick inserted into the centre comes out clean and the top has begun to brown. Cool on a wire rack.

Serve it with some fruit, or even melt and drizzle some dark chocolate over it. The beauty of a base recipe is that the decorating and flavour change ups are endless.
A healthier, but just as delicious banana recipe that’s a real keeper.
