Flammekueche, flammkuchen or tarte flambée

So what is a flammekueche? Is it German or is French as it is also called tarte flambée? It is, in fact, a bit of both.

The first flammekueche were made by German farmers living near the German-French border that would bake bread just once a week in a wood-burning oven.

To check the temperature the farmers would put a flammekueche in the oven. If the kueche would be done in less than 2 minutes the oven was hot enough to bake bread.

With this German-French region come a number of different pronunciations for this flammkuchen.

When French annexed Alsace the flammekueche also became part of the French cuisine with a French name of course.

That is how the tarte flambee came about. 

Flammekueche ingredients

To make this tarte flambée recipe you have to make a dough and add this classic topic. Put the following ingredients on your shopping list:

  • Pizza dough base
  • Fromage blanc or Philadelphia cheese
  • Flour, for dusting
  • Onion
  • Bacon
  • Salt and pepper

How to make this flammekueche recipe

Step 1 in this recipe is to make your very own pizza dough. You can use a store-bought pizza dough but I would recommend making your own.

Then heat your oven as high as it can go. If that is 500℉/250℃ that is perfect, if it can go higher heat it up. 

While you let the dough rise you can finely slice your onion. I use a mandoline slicer to get ultra-thin sliced onion rings. 

When the dough has proofed sprinkle some flour on a board and roll the dough into a round shape.

Take the Fromage blanc or white cheese and spread it on the dough base and leave about 1-inch border at the edge. 

Divide the thinly sliced onion on the dough. Sprinkle the bacon on a the flammkuchen. Put your oven to broil for 5 minutes to let it warm.

Put the tarte flambée in the oven for about 5 to 6 minutes and you are ready to serve.

Store you German pizza

You can either make the dough ahead of time and store it in the fridge and leave it no more than 48 hours in the fridge.

If you want to keep it for longer you can either freeze the dough. Make the whole German pizza and put it in the freezer or bake the pizza and store it in the freezer.

How to eat tarte flambée?

You can eat your tarte flambée with a knife and fork or with your hands. If you eat with your hands cut the flammkuchen in wedges.

  • You can fold your wedge in half and take a bite
  • Roll the wedge into a spiral
  • Cut in long strips and fold them up neatly

  1. Make your very own pizza dough #15462 and let it rise. Then heat your oven as high as it can go at 500℉/250℃ or higher if possible
  2. Finely slice your onion with a mandoline slicer to get ultra-thin sliced onion rings 
  3. Roll the dough into a round shape. Spread the Fromage blanc or white cheese and on the dough base and leave about 1-inch border from the edge
  4. Divide the sliced onion on the dough. Sprinkle the bacon on a the flammkuchen
  5. Put your oven to broil for 5 minutes to let it warm
  6. Put the tarte flambée in the oven for about 5 to 6 minutes
  7. Ready to serve
