Vegan chocolate protein banana muffins

I know what you are thinking chocolate, banana haven’t I seen that in other recipes on the Tortilla Channel before? Correct! Just look at my vegan chocolate banana muffin, French toast tortilla or my fruit cake with banana and (drumroll) chocolate.

I use these two ingredients a lot in sweet recipes as well as apple sauce my favorite substitute for butter in my cake recipes. In my opinion you can never have too much banana and chocolate but today I am switching it up just a little bit.

Last time I made the muffin with a flaxseed egg replacement but in this recipe I am using the magic egg replacement called aquafaba. I hear you thinking aqua what? What is it and where do I get it? Well chances are you already have a lot of aquafaba in your cupboard. Aquafaba comes in cans of beans like chickpeas, kidney beans, black beans, red beans, cannellini beans.

The next likely question is, will my sweet muffin taste of beans then? Simple answer is no, it will not. The liquid has a distinct taste but as the ingredients combine and will be baked the muffins will fluff up due to the aquafaba but will not take on the taste. I have been so amazed by the results of baking with aquafaba and I do not miss egg in this recipe.

So do not just drain a can of beans but preserve this liquid if you are planning on baking a recipe that requires egg substitute. With a hand mixer you can turn it into whipped eggwhite without egg, use it in a merengue or you can use it for eggless mayonnaise. About 3 tbsp of aquafaba equals 1 egg.

  • Sweet and fluff
  • Made with spelt flour
  • Lots of protein
  • A bit chocolatey
  • Contain pecan nuts
  • Oreo cookies
  • Banana and raspberry

Serves: 12 Prep Time: 5 minutes Cooking Time: 20 minutes

Easy vegan chocolate protein banana muffins with raspberry, oreo's and aqua faba egg replacer. Delicious and fluffy. Lets get started!

Ingredients

  • 1 cup spelt flour
  • 2 tsp stevia
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 28 gram vegan chocolate protein powder
  • 3 tbsp of acqua faba
  • 100 gram apple sauce
  • 1 tsp of vanilla extract
  • 1/2 cup of pecan nuts
  • 6 oreo crushed
  • 1/2 cup of raspberry

Instructions

First combine all the dry ingredients spelt flour, baking soda, baking powder, salt, stevia and chocolate protein powder

Than combine all the wet ingredients smashed banana, apple sauce, vanilla extract, aquafaba

Then add wet to dry ingredients and stir.

Chop pecan nuts and stir through the batter. Then smash the oreo cookies and add to the batter as well

Lastly add the raspberries in the mix

Pre heat the oven to 375F and put the batter in a muffin tin

Bake for 20 minutes or until a toothpick comes out clean
