Oven baked puff pastry apple beignets

There are two things we eat at New Years and one of them is the apple beignets. There are a lot of versions of the beignet and I am showing the oven baked one. With pre bought Puff Pastry and some homemade apple pie filling this is a very fast beignet. This recipe is one of my favorite’s for New Years eve. One thing that I have not yet tried and is on my to do list for coming year is make puff pastry from scratch. I have not yet tried it because I can buy ready made puff pastry which is no excuse to give it a go myself. January is going to be the big “how to” month with a lot of tortilla, flatbread and pancakes recipes, so a how to make puff pastry tutorial will fit right in.

Beignets come in a lot of versions. With batter and then fried in oil, with puff pastry and fried in oil but with Christmas and a lot of eating just behind us I decided to make these oven baked. The puff pastry has a lot of butter in it but I will not add more calories via the oil. When you oven bake puff pastry it gets really crisp. When you fry them in oil the pastry will set out even more but will be more soft. Just choose what you like best.

You can make this recipe and fry them in oil. When you do fry them in oil do not put sugar on them before you fry but wait until after the fried them.

For this recipe I have used my trusted apple pie filling that I love so much. If you have made it and stored it in the fridge or freezer you can use it in this recipe.

To make it I roll the puff pastry a little so I can cut about 3 inch circles from the pastry. Then I put on circle on parchment paper, add apple pie filling and press another circle on top. To make make the circles stick even better put some water between the two pastry circles and press tight.

Before putting them in the oven I lightly brushed the beignets with water and sprinkled with organic sugar. In the oven at 460℉/225℃ for at least 15 to 20 minutes until golden brown. You can sprinkle them with some powdered sugar if you like an serve.

These can be stored in the freezer perfectly. Want to eat them defrost and warm them a couple of minutes in the oven and you are good to go. So yummy.

Ingredients

  • 6 pre bought puff pastry squares
  • apple pie filling or 2 apples
  • sugar
  • water

Instructions

Make apple pie filling

Preheat the oven at 460℉/225℃

Roll the dough until you can cut two, 3 inch circles. Reuse the excess puff pastry. Make 18 puff pastry circles

Put parchment paper on a baking tray and put one circle on the paper

Add some apple pie filling and press the second circle on top of the first circle with apple. Add some water to make the circles stick together better

Repeat 8 more times

Brush the beignets lightly with water and sprinkle with sugar

Bake in the oven for 15-20 minutes

Notes

If you do not want to make apple pie filling, cut an apple, remove the clock house and slice in thin slices.
