One Pan Italian Sausage and Veggies

Making dinner for the family every day can get pretty boring and monotonous, and the struggle to find a new exciting Recipe can be exhausting. With this One Pan Italian Sausage and Veggies recipe, fast and tasty meals can be both combined within one simple recipe (unheard of right?). It is super healthy, inexpensive and you can make this 20 minute recipe look and taste like restaurant quality - and who does want that? MORE time with the kids and significant other and LESS time spent in the kitchen. The best part about this recipe is that ingredients can be adjusted and substituted to accommodate whatever you like and whatever is currently in your fridge at the time. No matter what vegetables or meat you decide to you, this recipe will always turn out fantastic. The more color you can add, the better!

Prep time: 10 min
Cook time: 30 min

Ingredients:
- 16 oz Italian Sausage, chopped (I like to make it into little balls for my 2 year old!)
- 1 cup chopped red pepper
- 1 cup chopped yellow pepper
- 1 cup zucchini
- 1 ½ cups baby carrots
- 1 small lemon (sliced thinly)
- 1/4 cup Parmesan cheese
- 4 tablespoons olive oil
- 1/2 teaspoon garlic and herb seasoning
- 1/2 teaspoon cumin
- 1/8 teaspoon red pepper flakes
- Dash of salt and pepper to taste

Directions:

  • Preheat oven to 400 degrees F. Line a large baking sheet with foil or parchment paper (for quick and easy clean-up).
  • Wash and chop all vegetables to desired size and spread out evenly over pan with sausage
  • In a small bowl, mix all seasonings, salt and pepper, and olive oil and stir until well mixed.
  • Pout the mixture over pan and thoroughly toss to coat. Squeeze lemon juice over pan and sparsely add remaining slices on top of vegetable for flavoring, if desired. 
  • Place in the preheated oven for 15 minutes. Remove and toss. Place pan back in the oven for an additional 15-20 minutes or so until well cooked. I like to leave the oven on broil for the final 2-3 minutes so the veggies become a little more tender and crispy
  • Remove from oven and top with freshly grated Parmesan cheese and serve!

You can also add other vegetable of your choice, such as broccoli and potatoes to add a variety of colors and flavors! Oftentimes I like to add a bit of sriracha sauce on top to enhance the flavor and add a little bit of heat.

I usually serve this meal on top of white rice and garnished with green onions on top! This recipe is amazing if you tend to do a lot of meal prepping, and you are looking for quick and simple recipes that still taste amazing even when they’re reheated.
