If you have kids, you should be very familiar with school holiday programs. This is where parents watch their kids perform songs with corresponding hand motions, all the through the lens of a smartphone.

These exhibitions are perfect opportunities to soak up an abundance of cuteness and secretly note how much your kid is blowing it out of the water.

Or, at least, that’s how I always imagined it’d be with my kids. Turns out none of them are keen on public theatrics.

I’ve hauled my cookies to countless shows to watch my kids standing silent and motionless in a sea of their dutifully performing peers. No amount of waving, encouragement, or extended family spectators draws them out of their shell.

Recently I attended another of these programs at Elliot’s preschool. In order to increase my chances of actually having a performance to observe, I offered a fair amount of pre-game stoke up and practice sessions. This was going to be the show of his lifetime!

Maybe it’s just not in their DNA, though. Elliot followed in his siblings footsteps by turning to stone on stage, never offering me a single note. After the show, I was afraid I might have pushed too much, and he was really beating himself up over his lack of follow through. Elliot refused to eat a single bite of post show refreshments, not even these killer Flourless Fudge Filled Nutella Cookies.

But, it turns out not all hope is loss! Elliot went home and threw up all over the dinner table! I know…not typically something to celebrate, but even Pavarotti couldn’t be expected to sing when all he wants to do is heave-ho all over the orchestra. Christmas Pageant here we come!

The fudge filling for these Flourless Fudge Filled Nutella Cookies makes more than you need for this recipe.  Other cookies this Flourless Nutella Cookie dough can morph into are:

  • Add 1/2 teaspoon orange zest and 1/2 teaspoon orange extract into the cookie dough for Flourless Fudge Filled Nutella Orange Cookies. Drizzle with melted chocolate and holiday sprinkles to make them festive.
  • Leave out the fudge filling and roll cookie dough into 1 inch balls. As soon as they come out of the oven place a Hershey Kiss™, Rolo™, or Peanut Butter Cup into the middle and gently press down.
  • Drizzle the tops of the cookies with melted chocolate and sprinkle fleur de sel on top for a salted Nutella cookie.
  • Play off that natural nutty flavor from the Nutella and mix chopped hazelnuts or macadamia nuts with white chocolate chips into the cookie dough.

Flourless Fudge Filled Nutella Cookies

Flourless Fudge Filled Nutella Cookies have a simple two ingredient fudge stuffed inside an easy three ingredient cookie that tastes absolutely heavenly!

Easy Fudge:

  • 14 oz sweetened condensed milk
  • 2 cups semi-sweet chocolate chips

Flourless Nutella Cookies:

  • 1 cup Nutella
  • 1 cup quick cooking oats
  • 1 egg

Optional Chocolate Drizzle:

  • 1/2 cup semi-sweet chocolate chips
  • 1 tsp. vegetable oil

Easy Fudge:

  1. Line a 8X8 pan with foil and spray foil with cooking spray. Set aside. 

  2. Place sweetened condensed milk and chocolate chips in a saucepan. Heat over medium low until chocolate is melted and mixture is smooth. Pour into prepared pan and let set for at least 4 hours or overnight. Can store cooled fudge covered in fridge until ready to use. 

Flourless Nutella Cookies:

  1. Preheat oven to 350ºF. Line a baking sheet with parchment paper and set aside. 

  2. In a food processor or blender mix Nutella, oats, and egg for about 30 seconds, or until mixture comes together into ball. Portion out dough into 1 inch balls. 

  3. Take a small square of prepared fudge and roll into about twenty 1/2″-1″ balls. (You will have fudge leftover. See Recipe Notes for leftover ideas.) Take Nutella dough ball and press around fudge ball until it is completely covered. Place balls about 2 inches apart on prepared baking sheet.

  4. Bake for 10-11 minutes or until just set. Cool on baking sheet for 5 minutes and then transfer to wire rack to cool completely. 

Optional Chocolate Drizzle:

  1. In a small microwave safe bowl, place chocolate chips and vegetable oil. Heat in microwave on high for 1 minute, stirring occasionally. Use a spoon to drizzle over cookies and dust with sprinkles or fleur de sel. Let chocolate cool and harden before storing in airtight container.
