- 1large onionchopped
- 2cloves garliccrushed
- 1stalk celerychopped
- 1/2each rewd pepperchopped
- 3small eggplantssliced
- 4tablespoons tomato Salsa
- 12each black olives
- Heat the oil in a skillet and brown the pork chops.
- Remove chops, add all the vegetables and cook until soft.
- Add the chops, salsa and olives to the pan. Simmer on very low heat for 1 hour. Serve with creamy mashed potato and squash and a fresh green vegetable.
Note: Lean pork cuts can be used in this recipe.
