Beef and Sprout Salad

Ingredients
- 1tablespoon vegetable oil
- 8oz fillet steakthinly sliced
- 1each onionsliced
- 1stalk freh lemongrasschopped
- 1clove garliccrushed
- 2tablespoons fish sauce
- 1tablespoon lemon juice
- 2cups long-grain ricecooked and cooled
- 2oz bean sprouts
- 2each tomatoeschopped
- 8each green onionssliced
- 1each carrotthinly sliced
- 1/4cup fresh mintchopped
- 2oz roasted cashew nuts
Instructions
- Heat the vegetable oil in a wok or frying pan over medium heat, add beef and stir-fry for 2-3 minutes or until beef is brown. Remove beef from pan and place in a bowl.
- Add onion, lemongrass and garlic to pan and stir-fry for 2-3 minutes or until onion is golden. Add onion mixture, fish sauce and lemon juice to beef, toss to combine and set aside.
- Place rice, bean sprouts, green onions, tomatoes, carrot and mint in a bowl and toss to combine. Line a serving platter with the rice mixture, add the beef mixture and sprinkle with cashew nuts.
