Peach and Shrimp Salad

Ingredients
- 7oz dried peaches
- 1tablespoon lemon juice
- 2teaspoons brown sugar
- 1each lemon zestgrated
- 1/2teaspoon salt
- 1/2teaspoon freshly ground black pepper
- 5 1/3tablespoons sherry vinegar
- 2drops Tobasco
- 2teaspoons Dijon mustard
- 1each egg
- 2/3cup light olive oil
- 1lb green salad leaves
- 12each cooked jumbo shrimppeeled and deveined
Instructions
- Place the peaches in a flat dish. Mix the lemon juice, zest, brown sugar, salt, pepper, vinegar, and Tabasco and pour over the peaches. Let stand at room temperature for 30 minutes.
- Remove the peaches from the vinegar mixture. Pour the vinegar mixture into a blender or food processor, add the mustard and egg, and process until smooth. With the motor running, add the oil in a thin, steady stream. The dressing will become creamy and thicken slightly.
- Divide the salad mix onto 4 plates place 2 peach halves on top of the salad. Add 3 shrimp to each salad plate. Spoon the dressing over the salad and serve immediately.
Recipe Notes
Pairs with white wines. White wines include: Gewurztraminer and Riesling Off-Dry.
