Steamed Scallops with Black Beans and Garlic

Ingredients
- 12large scallops in half shells(or 24 small scallops)
- 1tablespoon dry sherry
- 1tablespoon Chinese salted black beans
- 1large garliccrushed
- 1tablespoon Soy Sauce
- 1/4 teaspoon salt
- 1pinch freshly ground black peper
- 1teaspoon olive oil
- 1teaspoon cornstarch
- 1tablespoon sesame oil
- 1each green onion, cut into fine slices
- 12eash cilantro sprigs
- 12each hot chiliseeded and cut in to 1/5 inch/5mm diamond shapes
Instructions
- Use the scallop shells for the cooking and serving dishes. Mix scallops with the sherry, place 1 scallop in each shell. Set aside.
- Soak the black beans in cold water for 15 minutes, rinse, dry on paper towels, and chop. Combine beans, garlic, soy sauce, salt, pepper, sugar, oil and cornstarch. Distribute some of this mixture over each of the scallops, and sprinkle the sesame oil.
- Bring a few inches of water to a vigorous boil in a steamer. Place the scallops on a steamer rack, cover tightly, and steam for 5 minutes. Remove, sprinkle with green onions, and garnish each scallop with cilantro and a hot chili diamond before serving.
