Bean, Buckwheat and Bacon Salad

Ingredients
- 1small head broccolibroken into florets
- 1/2cup buckwheat kernels
- 6oz snow peas
- 6each rashers baconcut into strips
- 15oz caned lima beansor butter beans, drained and rinsed
- 1/4cup fresh parsleychopped
French Dressing
- 4tablespoons olive oil
- 1tablespoon cider vinegar
- 1teaspoon Dijon mustard
- fresh ground black pepper
Instructions
- Boil the buckwheat in 4 cups of water until tender, about 5-10 minutes.
- Steam the broccoli and show peas separately until just tender. Drain and place in a large salad bowl.
- Cook the bacon in a frying pan, stirring constantly for 4-5 minutes or until lightly browned. Remove and drain on paper towels.
French Dressing
- To make dressing, place the olive oil, vinegar, mustard and black pepper in a screw-top jar. Shake mixture to combine.
- Add bacon, beans and parsley to salad bowl. Pour over dressing and toss to combine. Serve immediately.
Recipe Notes
