Roasted Tomato, Bell Pepper and Bread Soup

    Ingredients
    • 2tablespoons Kalamata olives
    • 2lb Roma tomatoes
    • 2each red bell peppers
    • 3cloves garliccrushed
    • 2each onionsfinely diced
    • 2teaspoons ground cumin
    • 1teaspoon ground cliantro
    • 1quart chicken stock
    • 2slices white breadcrusts removed, torn into pieces
    • 1tablespoon balsamic vinegar
    • salt and ground black pepper
    Instructions
    1. Preheat the oven to 180°C/350°F. Lightly oil a baking dish, place tomatoes and bell peppers in the baking dish and bake for 20 minutes or until the skins have blistered. Add in the garlic, onion, cumin and cilantro for the last 5 minutes. Set aside to cool, take out the tomatoes and bell peppers, remove their skins and roughly chop.
    2. Set the slow cooker on high, add the cooked vegetables and stock and cook for 2 hours. Add bread, balsamic vinegar and salt and pepper, and cook for another 50 minutes.
    Recipe Notes

    Pairs with red and white wines. Red wines include Chianti. White wines include Pinot Gris and Sauvignon Blanc.
