Racing Cars Mini Cupcakes

Ingredients
- 3oz buttersoftened
- 1/2cup superfine sugar
- 1each egg
- 1tablespoon coca powdersifted
- 1cup self-raising floursifted
- 5 1/3tablespoons milk
- 1/2teaspoon vanilla extract
Topping
- 3oz butter
- 1cup powdered sugar
- 1/2teaspoon blue food coloring
- 24each racing cars
Instructions
- Preheat the oven to 160°C/350ºF. Line a 24 mini cupcake pan with mini cupcake papers. In a medium sized bowl, use an electric mixer on high speed to cream the butter and sugar until light and fluffy. Add the egg and mix well.
- Add the cocoa, flour, milk and vanilla, and beat with an electric mixer on medium until well combined.
- Divide the mixture evenly between the 24 mini cupcakes. Bake for 10-15 minutes until well risen and firm to the touch. Cool for a few minutes and then transfer to a wire rack. Let cool completely before icing
Topping
- Use an electric mixer on high speed to beat the butter and blue food coloring, until light and fluffy. Gradually beat in the powdered sugar until all ingredients are combined, continue beating for 1 minute. Spread evenly over each cupcake and decorate with racing car candy.
