Lamb Recipe

- 1medium onionchopped
- 2cloves garlicchopped
- 2each fresh birds-eye chiliesseeded and chopped
- 2tablespoons ground cumin
- 2tablespoons ground cilantro
- 4tablespoons olive oil
- 5 1/3tablespons lime juice
- 1/2teaspoon sugar
- 1 1/2lb lam filetsthinly sliceed
- 1cup long-grain rice
- 5oz baby arugula leaves
- 1/2cup fresh basil
- Blend or process onion, garlic, birds-eye chili, cumin, cilantro, 1 tablespoon of the oil, the lime juice and sugar until smooth.
- Combine lamb with pureed spice mixture in large bowl, cover and refrigerate for 3 hours or overnight.
- Combine the rice with 2 cups water in a saucepan. Bring to a boil, reduce heat to low, cover and cook for 15 minutes. Remove from heat and add the arugula. Let stand covered for 10 minutes.
- Heat remaining oil in skillet, stir-fry lamb and marinade in batches until browned. Add basil and lamb to skillet and stir-fry, tossing until combined. Serve with rice.
