    Ingredients
    • 2oz butters
    • 4 1/3lb lobsterboiled, shelled and cut into small pieces
    • 2teaspoons salt
    • 1/4teaspoon groune Cayenne pepper
    • 1/4teaspoon ground nutmeg
    • 1`cup heavy cream
    • 4each egg yolks
    • 2tablespoons brandy
    • 23tablespoons dry sherry
    • reserved lobster tail shell for 4 vol-au-vent dishes
    Instructions
    1. In a shallow skillet, melt the butter over a moderate heat. When the foam subsides, add the lobster.
    2. Cook slowly for about 5 minutes. Add the salt, Cayenne pepper and nutmeg.
    3. In a small bowl, lightly beat the cream with the egg yolks. Add the mixture to the skillet, stirring continuously.
    4. Finally, add the brandy and sherry as the mixture begins to thicken. Do not boil, the sauce will curdle.
    5. Serve either placed back in the lobster tail shell or in vol-au-vent dishes. Serve with steamed rice.
