Easy French Onion Soup

Ingredients
- 2oz butter
- 1 1/2lb onionspeeled and thinly sliced
- 1clove garlicpeeled and crushed
- 2teaspoons all-purpose flour
- 1 1/4quarts beef stock
- salt and grouind black pepper
- 4slices French breadabout 1 in thick
Instructions
- Heat the butter in a large heavy-based saucepan over a low heat until it melts and begins to foam. Add the onions and garlic, cover the pan, then cook, stirring often, for 30-35 minutes, until the onions are golden brown.
- Add the flour and cook, stirring constantly, for 2-3 minutes. Pour in the stock little by little, stirring all the time, and bring to a boil. Reduce the heat and simmer, covered, for 30 minutes. Season to taste with salt and black pepper.
- Preheat the broiler to high. Toast the French bread on one side under the broiler, top the uncooked side with the grated cheese. Broil until the cheese has melted and browned. Pour the soup into individual bowls and place a piece of the toasted bun on top of each serving.
Recipe Notes
NOTE: The secret with this soup is to cook the onions long enough to give them a brown color, without burning the butter. The browner the onions, the sweeter and richer the soup will be. Adding 2 teaspoons of sugar to the onions after 10 minutes makes them brown faster.
