- 2tablespoons olive oil
- 10each shallotschopped
- 1cup brownn sugarpacked
- 1/2cup fish sauce
- 2inch piece of fresh gingerjulienned
- 10small chilieshalved, seed removed and julienned
- 2tablespoons lime juice
- 7oz cellophane noodles
- 1bunch fresh cilantro leaveschopped
- 1lb steelhead trout filetscut into 1 inch-thick strips
- 1pinch salt
- Heat the olive oil in a heavy-based skillet and gently saute the chopped shallots until golden. Add the sugar and heat in the skillet until dissolved. Cook on a medium heat until the mixture has caramelized, about 5 minutes, stirring well. Add the fish sauce, ginger, chilies, and lime juice and stir well until combined season to taste. Keep hot.
- Soak the cellophane noodles in hot water until they have softened, about 10 minutes, then rinse in cold water. Drain noodles add the cilantro leaves and just enough of the sauce to moisten the noodles.
- Pan-fry or grill the fish filets until just cooked.
- Arrange the noodles on individual plates arrange the fish pieces on top, garnish with extra chilies and cilantro leaves and spoon more sauce over the dish.
Note: If you want the dish to be extra spicy, simply halve the chilies and leave the seeds inside.
