- 2each zucchinicut into 2 inch slices
- 8large scallops
- 1tablespoon olive oil
- salt and freshly ground black pepper
- 1/2cup apple juice
- 2tablespoons butter
- fresh flat leaf parsleyto garnish
- Coat the zucchini slices and scallops gently in the oil and season.
- Heat a large heavy-based skillet until hot. Add the zucchini slices and cook for 2 minutes on one side. Turn the zucchini over and add the scallops to the pan. Cook for 1 minute, turn the scallops over. Cook for a further minute, until the scallops are golden and the zucchini browned.
- Remove the scallops and zucchini slices from the pan and keep warm. Pour the apple juice into the pan, add the butter and cook until reduced to a syrupy sauce. Spoon the sauce over the scallops and zucchini slices and garnish with parsley.
NOTE: Scallops are expensive but delicious, so save this dish for a special treat for two. Make sure you sear them over a high heat; that way they’ll be sealed and really tender.
