Roast Butternut Squash Puff Slice

    Ingredients
    • 1sheet butter puff pastrythawed
    • 14oz butternut squashpeeled and cut into 1/5 in/ 5mm-thick slices
    • 1tablespoon olive oil
    • salt and pepper
    • 1cup baby spinach leaves
    • 1cup tasty cheesegrated
    Instructions
    1. Preheat oven to 400°F/200°C. Toss butternut squash in a baking dish with olive oil, salt and pepper and roast for 15-20 minutes or until tender.
    2. Reduce oven temperature to 360°F/180°C and line a baking sheet with baking paper. Place pastry on the prepared baking sheet, put spinach on the baking sheet and top with cooked butternut squash. Sprinkle cheese over the squash and bake for 20 minutes or until pastry is crisp and golden brown. Cut into 4 pieces to serve. Serve with arugula, pear and Parmesan salad.
    Recipe Notes

    NOTE: If you prefer, you can use sweet potato instead of the butternut squash in this recipe.
