Creamy Butternut Soup

Ingredients
- 1lb buternut squashpeeled and cut into chunks
- 1pint tomato juice
- 1tablespoon raw sugar
- 2each chicken stock cubescrumbled
- 1dash Tabasco
- 1each bay leaf
- salt and freshly ground black pepper
- 1/2cup heavy cream
- 1/4cup parsleychopped
Instructions
- Combine all ingredients except cream and parsley in a slow cooker with 8 cups of water. Cook until squash is tender, approximately 4-5 hours on low or 3 hours on high.
- Remove bay leaf and process the mixture, a cupful at a time, in a blender or food processor. Return mixture to slow cooker and reheat. About 1 hour before serving, add cream and heat through. Serve sprinkled with fresh parsley.
