Vine Tomatoes and Goats Cheese Bruschetta

Ingredients
- 15oz small vine-ripened tomatoes
- 2tablespoons extra virgin olive oil
- 1clover garliccrushed
- 4sprigs Fresh Thyme
- 4each thicke slices ciabattacut on the diagonal
- 1/4cup tapenade
- 3 1/2oz soft goat's cheesecut into chunks
- fresh basil leavesto garnish
Instructions
- Preheat the oven to 220°C/425ºF. Divide the tomatoes into 4 portions of roughly the same size, each still attached to part of the vine. Carefully place in a roasting pan, drizzle with the oil and scatter with the garlic and thyme sprigs. Roast the tomatoes for 10 minutes or until they are tender.
- Preheat the grill to high. Toast the bread on both sides until golden. Spread each slice with 1 tablespoon of tapenade, add a few chunks of goat cheese and top with the tomatoes on the vine. Drizzle with the juices from the roasting pan and sprinkle with the basil leaves.
