- 4each skinless salmon filets
- 2tablespoon vegetable oil
- 2tablespoons light soy sauce
- 2tablespoons honey
- 1oz preserved gingerdrained and finely chopped
- 2each green onionscut into long strips
- 1each finely grated zest and juice
- freshly ground black pepper
- Place the salmon filets in a shallow non-metallic dish. Mix together the oil, soy sauce, honey, ginger, green onions, lime zest and juice and seasoning. Pour over the filets and turn to coat. Cover and marinate in the refrigerator for 10 minutes, or 1 hour if you have time.
- Preheat the grill to high. Lightly oil a baking tray. Lift the filets and green onions out of the marinade and place on the baking tray.
- Brush the filets with a little of the marinade, then cook for 3 minutes. Turn over, brush with more of the marinade and grill for 3-5 minutes, until cooked through.
NOTE: Ginger, lime and a little honey make a fabulous marinade for salmon. Their sweet and sour flavors go down well with children as well as adults. Serve with sugar snap peas and lime wedges.
