Lobster Provencale
    Servings4 servings

    Cook Time10 minutes
    Ingredients
    • 2oz butter
    • 1large garlic clovecrushed
    • 2each scallionschopped
    • 10oz canned tomatoes
    • salt and freshly ground black pepper
    • 1pinch saffron threads
    • 1large lobstercooked
    • 3tablespoons brandy
    • 3cups steamed rice
    • 1/2bunch chiveschopped
    • 1each lemoncut into wedges
    Instructions
    1. In a shallow skillet, melt butter over a moderate heat. Add garlic, scallions, tomatoes, salt, pepper and saffron. Cook until onions are translucent, about 2 minutes.
    2. Remove meat from lobster and cut into large pieces. Add lobster to skillet and flame with the brandy. Cook gently until lobster is heated through.
    3. Place rice on serving plate and sprinkle with chives.
    4. Remove lobster from skillet, keeping the cooking liquid as a sauce.
    5. Arrange the lobster on the rice and spoon the cooking liquid over lobster. Serve with lemon wedges.
    Recipe Notes
