Lobster Provencale

Ingredients
- 2oz butter
- 1large garlic clovecrushed
- 2each scallionschopped
- 10oz canned tomatoes
- salt and freshly ground black pepper
- 1pinch saffron threads
- 1large lobstercooked
- 3tablespoons brandy
- 3cups steamed rice
- 1/2bunch chiveschopped
- 1each lemoncut into wedges
Instructions
- In a shallow skillet, melt butter over a moderate heat. Add garlic, scallions, tomatoes, salt, pepper and saffron. Cook until onions are translucent, about 2 minutes.
- Remove meat from lobster and cut into large pieces. Add lobster to skillet and flame with the brandy. Cook gently until lobster is heated through.
- Place rice on serving plate and sprinkle with chives.
- Remove lobster from skillet, keeping the cooking liquid as a sauce.
- Arrange the lobster on the rice and spoon the cooking liquid over lobster. Serve with lemon wedges.
