Grilled Sea Scallop in Cos Spears

Ingredients
- 1lb sea scallops(approximately 12 scallops)
- 1/4cup couscouscooked and fluffed
- 3tablespoons orange juice
- 2tablespoons olive oil
- 3each mixed baby romaine lettuce leaves
- 2each blood orangespeeled and segmented (squeeze and reserve juice)
- 1large tomatocored and diced
- fresh cracked black pepper to taste
Instructions
- Coat scallops in cooked couscous. Season and grill scallops. Set aside and let cool. In a mixing bowl, combine orange juice and olive oil.
- Line up the spears of baby lettuce leaves, top with sea scallops, blood orange segments, green beans and tomato.
- Season the spears with fresh black cracked pepper and drizzle with dressing.
Recipe Notes
