Grilled Sea Scallop in Cos Spears
    Servings12 servings
    Prep Time20 minutes
    Cook Time10 minutes
    Ingredients
    • 1lb sea scallops(approximately 12 scallops)
    • 1/4cup couscouscooked and fluffed
    • 3tablespoons orange juice
    • 2tablespoons olive oil
    • 3each mixed baby romaine lettuce leaves
    • 2each blood orangespeeled and segmented (squeeze and reserve juice)
    • 1large tomatocored and diced
    • fresh cracked black pepper to taste
    Instructions
    1. Coat scallops in cooked couscous. Season and grill scallops. Set aside and let cool. In a mixing bowl, combine orange juice and olive oil.
    2. Line up the spears of baby lettuce leaves, top with sea scallops, blood orange segments, green beans and tomato.
    3. Season the spears with fresh black cracked pepper and drizzle with dressing.
    Recipe Notes

    Pairs with White and Sparkling wines. White wines include: Gewurztraminer, Riesling Dry, and White Burgundy.  Sparkling wines include: Prosecco.
