Chicken Recipes - Chicken Supreme

- 4each skinless chicken breasts
- 4oz tasty cheesesliced thinly
- 1bunch fresh asparagusthick ends removed
- freshly ground black pepper
- 3/4cup plain flour
- 1 1/4cups breadcrumbs
- 2each eggsbeaten
- 2tablespoons milk
- 1pint olive oil
- 4oz green beans
- 3 1/2oz watercress
- Slice each chicken breast in the side carefully to create a pocket. Slice half of the asparagus into small diagonal pieces. Stuff the chicken with cheese, asparagus and a sprinkle of cracked pepper. Close each breast with a toothpick.
- In three separate dishes lay out the flour, egg and breadcrumbs. Add the milk to the egg dish and whisk to combine.
- Steam the remaining asparagus and the beans for 4 minutes and set aside.
- In a large skillet on medium heat warm the olive oil and cook the chicken breasts, until golden brown. Turn and repeat. Approximately 4-5 minutes on each side. Serve garnished with watercress and accompanied by green beans and fresh asparagus spears.
