- 2tablespoons olive oil
- 1lb fresh scallopsin half shell
- salt and freshly ground black pepper
- 1/2cup onionminced
- 1clove garlicminced
- 1/4cup cured hamminced, such as procuitto
- 3tablespoons dry white wine
- 1/2cup breadcrumbs
- 1tablespoon parsleyminced
- 1teaspoon lemon juice
- Heat 1 tablespoon oil in a large skillet and sautee the scallops over high heat for 1 minute. Divide scallops among the shells and sprinkle with salt and pepper.
- Add onion and garlic and a little more oil, if necessary, to the skillet. Cover and cook over low heat for 15 minutes. Add ham and sautee for 1 minute. Stir in the wine and let it cook until evaporated, spoon mixture over scallops.
- Preheat the oven to 460°F/230°C. In a small bowl, combine breadcrumbs, parsley, lemon juice and remaining oil. Sprinkle over scallops. Place shells on baking sheet and bake 10 minutes. If necessary, put under the broiler to brown the top.
