Ingredients
- 6oz plain flour
- 1teaspoon baking powder
- 3oz butter
- 1pinch salt
- 1oz sugar
- 1/4cup raspberry jam
Custard
- 2teaspoons ginger
- 1teaspoon sugar
- 2each egg yolks
- 1cup milk
Meringue
- 3each egg whites
- 1/3cup sugar
Instructions
- Preheat oven to 200°C. Sift flour and baking powder into butter, salt and sugar and mix with 2 tablespoons cold water to make a firm dough. Roll out pastry to about 6mm and line the base and sides of a greased 20cm springform pan with the pastry.
- Bake for 25 minutes. While baking, make meringue.
- Allow tart to cool then spread thinly with raspberry jam and pile meringue on top. Reduce heat to 120 °C and bake until brown.
Custard
- Make custard by mixing sugar, flour, egg yolks and milk together. Fill the pastry case with the custard mixture.
Merinque
- Make meringue by beating egg whites with 4 tablespoons sugar.
