Princess Custard Tart
    Servings8 servings

    Cook Time30 minutes
    Ingredients
    • 6oz plain flour
    • 1teaspoon baking powder
    • 3oz butter
    • 1pinch salt
    • 1oz sugar
    • 1/4cup raspberry jam
    Custard
    • 2teaspoons ginger
    • 1teaspoon sugar
    • 2each egg yolks
    • 1cup milk
    Meringue
    • 3each egg whites
    • 1/3cup sugar
    Instructions
    1. Preheat oven to 200°C. Sift flour and baking powder into butter, salt and sugar and mix with 2 tablespoons cold water to make a firm dough. Roll out pastry to about 6mm and line the base and sides of a greased 20cm springform pan with the pastry.
    2. Bake for 25 minutes. While baking, make meringue.
    3. Allow tart to cool then spread thinly with raspberry jam and pile meringue on top. Reduce heat to 120 °C and bake until brown.
    Custard
    1. Make custard by mixing sugar, flour, egg yolks and milk together. Fill the pastry case with the custard mixture.
    Merinque
    1. Make meringue by beating egg whites with 4 tablespoons sugar.
