Soup Recipes
Try our Spicy Chicken Soup recipe. This soup recipe pairs with Rose, Red and White wines. Red wines include: Beaujolais, Barbers, Chianti, Carmenere, Sangoviese and Red Burgundy. White wines include: Gewurztraminer, Pinot Gris, Chardonnary, Riesling Dry, Riesling Off-Dry, Gruner Veltliner and Viognier. Enjoy!
- 1tablespoon vegetable oil
- 1each onionfinely chopped
- 2each fresh red chillieschopped
- 1clove garliccrushed
- 1tablespoon curry powder
- 1/2inch piece fresh gingerfinely grated
- 1teaspoon dried shrimp paste
- 1teaspoon ground tumeric
- 1teaspoon ground cumin
- 1/2teaspoon ground nutmeg
- freshly ground black pepper
- 2quarts chicken stock
- 1/2cup long-grain rice
- 8oz boneless chicken breasts filletschopped
- 1/4cup fresh cilantrochopped
- 2tablespoons lemon juice
- Heat the vegetable oil in a saucepan over medium heat. Add onion, chillies and garlic and cook, stirring, for 2-3 minutes or until onion is tender. Stir in curry powder, ginger, shrimp paste, turmeric, cumin, nutmeg and black pepper to taste and cook, stirring, for 1 minute longer.
- Add stock and rice to pan and bring to boil. Reduce heat to simmering and simmer for 15 minutes. Stir chicken, cilantro and lemon juice into pan and simmer for 5 minutes longer or until chicken is cooked.
