Malay Vegetable Salad

Ingredients
- 2tablespoons vegetable oil
- 4oz tofucubed
- 1each sweet potatothinly sliced
- 1cup brown ricecooked and cooled
- 8oz bean sprouts
- 15oz fresh pineapplediced
- 4oz snow peas
- 8each green onionssliced
- 2each cucumberssliced
- 1/2cup fresh basil leaves
- 1each fresh red chilisliced
- 2tablespoons chopped peanuts
Lime and Chilli Dressing
- 4tablespoons lime juice
- 2tablespoons Soy Sauce
- 2tablespoons chili sauce
- 1each fresh red chilli chopped
- 1clove garliccrushed
- 1/2teaspoon brown sugar
- 1/2teaspoon dried shrimp paste
Instructions
- Heat the vegetable oil in a frying pan over medium heat, add tofu and cook, turning frequently, for 3-4 minutes or until golden. Drain on paper towels.
- Add sweet the potato to same pan and cook, turning frequently, for 3-4 minutes or until golden. Drain on paper towels.
- Place the rice, bean sprouts, pineapple, snow peas, green onions, cucumbers, tofu, sweet potato, basil and sliced chilli on a serving platter.
- Drizzle the dressing over salad, sprinkle with peanuts and serve.
Lime and Chilli Dressing
- To make dressing, combine lime juice, soy sauce, chilli sauce, chopped chilli, garlic, sugar and shrimp paste.
Recipe Notes
