Lamb with Mint Butter and Saffron Mash

    Ingredients
    • 2lbs floury potatoes
    • 3oz buttersoftened
    • 1/4cup fresh mintchopped
    • 1teaspoon ground cumin
    • salt and freshly ground black pepper
    • 1/3cup heavy cream
    • 1pinch saffron threads
    • 4each lamb leg stgeaksabout 10 oz each
    Instructions
    1. Cook the potatoes in a large saucepan of lightly salted water for 15 minutes or until tender. Mash together half of the butter, the mint, cumin and a little pepper, cover and refrigerate. Put the cream and saffron strands in a small pan, gently heat through, remove from the heat and set aside for 5 minutes to infuse.
    2. Preheat the grill to high. Season the lamb steaks and grill for 4-5 minutes on each side, or until cooked to your liking. Cover with foil and let rest for 5 minutes. Drain the potatoes and mash, mix in the remaining butter and the saffron cream and season.
    3. Divide the chilled mint butter between the steaks and grill for a few seconds until it melts. Serve the steaks with the saffron mash and any pan juices. Garnish with extra mint.
    Recipe Notes
