Seafood Recipes - Paella

    Cook Time40 minutes
    Ingredients
    • 1each onionchopped
    • 3cloves garlicfreshly crushed
    • 1small red bell pepper
    • 1small green bell pepper
    • 2cups bomba rice
    • 1quart chicken stock
    • 12each raw shirmpshelled and deveined, tails left intact
    • 8oz squid rings
    • 3/4cup frozen peasthawed
    • 1/4cup fresh Italian parsleychopped
    • 1each lemoncut into wedges
    Instructions
    1. Combine the saffron threads and 2 tablespoons boiling water in a small bowl. Let stand for 5 minutes.
    2. Heat the oil in a large saucepan over medium-high heat. Cook the chicken for 2-3 minutes or until golden. Add the onion, garlic, and red and green bell peppers and cook for 2-3 minutes.
    3. Add the rice, saffron mixture and 3 cups of chicken stock. Bring to boil, cover and simmer over low heat for 15 minutes, stirring occasionally.
    4. Add the shrimp, squid, mussels, peas, parsley and remaining stock. Cook for another 8-10 minutes, stirring occasionally, or until the rice is tender and the seafood is cooked. Serve immediately with lemon wedges.
    Recipe Notes
