Seafood Recipes - Paella

- 1each onionchopped
- 3cloves garlicfreshly crushed
- 1small red bell pepper
- 1small green bell pepper
- 2cups bomba rice
- 1quart chicken stock
- 12each raw shirmpshelled and deveined, tails left intact
- 8oz squid rings
- 3/4cup frozen peasthawed
- 1/4cup fresh Italian parsleychopped
- 1each lemoncut into wedges
- Combine the saffron threads and 2 tablespoons boiling water in a small bowl. Let stand for 5 minutes.
- Heat the oil in a large saucepan over medium-high heat. Cook the chicken for 2-3 minutes or until golden. Add the onion, garlic, and red and green bell peppers and cook for 2-3 minutes.
- Add the rice, saffron mixture and 3 cups of chicken stock. Bring to boil, cover and simmer over low heat for 15 minutes, stirring occasionally.
- Add the shrimp, squid, mussels, peas, parsley and remaining stock. Cook for another 8-10 minutes, stirring occasionally, or until the rice is tender and the seafood is cooked. Serve immediately with lemon wedges.
