Salad Recipe
Looking for a nice summertime Salad recipe? ? Try our Warm Lamb Greek Salad. This main dish pairs primarily with red wines. This includes: Cabernet Franc, Cabernet Sauvignon, CSM, Malbec, Nebbiolo, Petite Sirah, Shriaz, and Syrah. Also, pairs with Riesling Off-Dry, a white wine. Enjoy!
Warm Lamb Greek Salad

Ingredients
- 6 each lamb filets
- 2tablespoons olive oil
- 1 1/2tablespoons fresh oregano
- 8oz Greek feta cheese
- 8oz cherry tomatoes
- 1each European cucumber
- 1medium red onionpeeled and halved
- 16each Kalamata olives
- 5oz mixed salad greens
Instructions
- Remove sinew (tendon) from the lamb filets with a sharp knife. Pour the olive oil over the lamb and sprinkle with the dried oregano. Rub well into the meat.
- Place in the refrigerator and marinate for a few hours. While meat is marinating, cut the feta into 1/2 in/10mm cubes. Slice the cucumber into thin slices. Slice the red onion thinly. Place in a salad bowl with the olives and mixed salad greens. Toss.
- Prepare the barbecue for direct-heat cooking. Heat to high and oil the grill bars well. Remove stems from tomatoes and place onto grill. Cook until they begin to collapse. Add to the salad bowl. Toss.
- Place lamb filets on hot grill, cook for 5 minutes each side. Cover and rest for 5 minutes, slice each filet on the diagonal into 4 pieces. Place sliced lamb on top of the salad with a little oil and vinegar dressing.
