I have been enjoying pomegranates much more than I have in previous holiday seasons. I hope you saw my recent post featuring my Jeweled Brussels Sprouts Salad, showcasing the gorgeous gem-like color of Pomegranate.
From October 1 until after the New Year, it is a food-centered time of year! However, many people can’t enjoy certain foods and drinks because of health or life choices, so it’s a great time to take a little extra effort to make sure they have something special too.
That’s why I came up with this Pomegranate Tangerine Mocktail! Anyone is is avoiding alcohol for health reasons or who may be too young to imbibe will really enjoy this alternative. Also special about this mocktail is the fact there is no added processed sugar. Just flavored mineral water and a splash of juices to add a little punch of flavor.
I love how the pomegranate and tangerine make this drink look like a sunset! You can make it in individual glasses or in a pitcher. I suggest garnishing with a straw if you are serving individual drinks so it can be stirred, or if using a pitcher be sure to stir so each serving gets an even amount of both types of juice.
- 1/2 cup pomegranate arils (the fruity seeds)
- 3 tangerines
- 8 tbsp pomegranate juice
- 32 oz flavored sparkling mineral water, such as tangerine, pomegranate, raspberry, or cranberry
- crushed ice
- 1. Juice 2 1/2 of the tangerines. Cut the rest into wedges for garnish.
- 2. Fill 4 glass or pitcher with crushed ice. Pour in (or divide amongst individual glasses) pomegranate juice, sprinkle in half the pomegranate arils, pour in the sparkling mineral water, and finally pour in the tangerine juice. Sprinkle over remaining pomegranate arils. Serve immediately with straws and a tangerine wedge as garnish.
