Dijon-Apple Glazed Chicken Thighs

I got out of the habit of meal prepping when I was recovering from surgery. Based on the work of Gretchen Rubin, good habits are related to happiness. Reducing stress makes me happy as well as eating well-balanced meals, so preparing food in advance keeps me from eating something bad for me and during the busy work week I don’t rush around so much.

This quick braised Chicken is so easy to prepare on a weeknight, and it’s great to pack up in containers for homemade “tv dinners” (that’s what I call my pre-portioned meals). Plus it reheats well and goes with any steamed vegetable because the sauce is the seasoning. I think steamed broccoli is the perfect side with this because the florets soak up the sweet and tangy sauce beautifully.

I think this recipe would be the perfect date night or dinner party meal because you could easily increase the number of servings. It’s also very easy to prepare and clean up is reduced because you can have a big platter of vegetables with the chicken on top.

Another great thing about this recipe for meal prep is that it reduces valuable space in the oven. You can put the chicken on a back burner and have plenty of room to roast vegetables and meats or make egg muffins. Dijon-Apple Glazed Chicken Thighs 
Printable Recipe

1 tbsp olive oil
1 3/4 lb boneless, skinless chicken thighs (8 thighs)
1 tsp crushed dried rosemary
1/2 tsp paprika
2 cups unfiltered, no sugar-added apple juice
1 tbsp honey
1 tbsp Dijon mustard
2 tbsp whole grain mustard
1 tsp balsamic vinegar
Salt and pepper, to taste

  1. Heat olive oil in a large saucepan over medium-high heat. Season chicken with rosemary, paprika, pepper, and lightly with salt (the mustard has some salt in it), and sear well on both sides.
  2. Mix apple juice, honey, mustards, and vinegar in a small bowl. Pour over the chicken, bring to boil, and reduce to simmer. Cover and cook 10 minutes.
  3. Remove lid, increase heat to high, and cook chicken until the sauce is thickened and reduced by half. Serve over your favorite vegetables.
