Cucumber and Watercress Soup

INGREDIENTS
  • 3 big size cucumber, peeled and coarsely chopped
  • 2 bunches watercress(কলমীদল শালুক প্রভৃতি), thick stems removed and coarsely chopped
  • 3 cup plain greek yogurt
  • 1 tablespoons fresh dill
  • 2 tablespoons fresh mint
  • 1 tablespoon lemon juice
  • Salt and black pepper as per taste
  • Olive Oil

TIME REQUIRED : Less then 50 minutes

PROCEDURE

STEP 1

Combine all ingredients in blender, puree until smooth.

STEP 2

For a very smooth texture you could strain this through a sieve. Adjust lemon juice, salt and black pepper.

STEP 3

Transfer the soup to a bowl or container to chill for at least 2 hours before serving.

STEP 4

Garnish with dill fronds and olive oil.
