Chole Bhature

Chole Bhature is an authentic tasting meal that is relished by everyone. This dish is one of the most eaten breakfast in the Northern part of India. It can be eaten at lunch. This is one such dish which you can find almost everywhere in India. Chole bhature is a combination of chickpea curry served with deep-fried flour pooris.

INGREDIENTS
For Chole:
  • 2 cups Chickpea (Chole soaked overnight and pressure cooked))
  • 2 onions Chopped
  • 1 cup chopped tomatoes
  • 8-10 Garlic Cloves
  • 1 inch Ginger
  • Big Pinch hing
  • 1 tsp Red Chilly Powder
  • 1 tsp rurmeric powder (haldi)
  • 1 tsp coriander powder (dhaniya powder)
  • 1 tsp cumin powder (zeera powder)
  • 1 bay leaf
  • 1 tsp garam masala
  • 1 tsp Everest Chana Masala
  • 1 tbsp butter
  • Oil as per requare
  • Salt and sugar as per taste
For Bhature:
  • 1 cup Flour (Maida)
  • 1/2 cup Suji(Semolina)
  • 1/4 cup Dahi (Curd)
  • 1/4 tsp Baking Soda
  • 1/4 tsp salt
  • 1/4 tsp Sugar
  • Oil (for frying)
  • water to make dough

TIME REQUIRED : 1hr(cooking time)

PROCEDURE

For Bhature:

STEP 1

Combine the flour, semolina, oil, salt, sugar and baking Powder and mix well.

STEP 2

Add yogurt and mix well. Then little by little add water and knead a soft dough.

STEP 3

Apply little oil and cover it with a muslin cloth. Leave it for 2-3 hours. Once it is ready it will be double in size.

STEP 4

To make the bhature, heat the oil and take a small ball of the dough and roll like puri but this needs to be kept thicker than poori. and Deep fry till the bhaturas puff up and both sides are slightly golden brown in color.

For Chole:

STEP 1

In a pan add oil,add bay leaf,chopped onions and saute it. Now add chopped ginger and garlic.saute well till all moisture evaporates.

STEP 2

Followed by turmeric, chili powder, coriander powder, cumin powder, asafoetida and salt, fry the ingredients together well.

STEP 3

For de glazing the pan add a little water. then add garam masala, Everest chole masala , sugar and all pressure cooked chole to it. Give it a good boil and mash some with the back of a ladle.

STEP 4

Cook covered over low heat for 5-6 minutes. Turn off the heat and set aside.

STEP 5

Garnish the chole with coriander and butter and serve them hot with bhaturas.
