Easy Chicken Fried Rice

Chicken Fried Rice is one of those interesting comfort foods. This food is a simple and light option for dinner. It’s quick to make and can be served by itself. The nice thing about the Chicken Fried Rice is so versatile. The ingredients are pretty simple and you can add almost anything to it. Eggs, chicken, paneer, tofu, vegetables. This homemade version is healthier, while still being loaded with flavor.

INGREDIENTS
  • 1cup rice(Use short-grain rice)
  • 500gm bonless chicken(boiled)
  • 2 big size onion(chopped)
  • 1tsp garlic(minced)
  • 1 medium carrot(peeled & diced)
  • 2tbsp capsicum(diced)
  • 2tbsp red bell pepper(diced)
  • 2tbsp dark soy suce
  • Freshly ground black pepper to taste
  • 2tsp vinegar
  • 2-3 tbsp vegetable oil
  • salt as per taste
  • sugar as per taste

TIME REQUIRED : 10 mins to prepare and 15 mins to cook

PROCEDURE

STEP 1

Heat oil in a large wok. Add the onion and cook, until they start to soften. Mix in the minced garlic and cook until fragrant, about 30 seconds.

STEP 2

Now add in chicken and toss well. Cook this for 7 to 8 mins.

STEP 3

Add chopped red bell pepper,capsicum, carrot. Cook for a further 2 minutes, stirring regularly.

STEP 4

Okay! Now add rice keep tossing on high heat for few min.Use a spatula to toss everything together and to ensure the rice doesn’t stick to the bottom of the pan.

STEP 5

Add in salt, pepper and sugar, mix well.

STEP 6

Pour in the remaining soy sauce and vinegar and toss well.

STEP 7

Remove from heat, serve immediately garnish with spring onion.
