Omelette Curry

Today I am sharing with you a super easy recipe “Omelette Curry”, which is one of the favorite dish of all the egg lovers.. Omelettes are so easy and versatile. We can eat them at breakfast, lunch or dinner. Twist the Omelette by combining the egg curries with some spicy gravy to make the Omelette Curry. It’s bit spicy and so testy. You can enjoy this Omelet Curry with rice or roti.

INGREDIENTS
  • 2 Eggs
  • 2 medium size Potatoes (Cut in fingers)
  • 1 big Tomato (pureed)
  • 1 medium size Onion(chopped)
  • 2-3 Green chilies (chopped)
  • 2 big size Onion paste
  • ½ tsp Ginger paste
  • 1 tsp Garlic paste
  • ½ tsp Garam Masala powder
  • ½ tsp Turmeric powder
  • 2 tsp Red Chili powder
  • Salt as per taste
  • Sugar as per taste
  • 3 to 4 tbsp Muster oil

TIME REQUIRED : Less than 30 minutes

PROCEDURE

STEP 1

At first we need to prepare Omelette, which all you know how to prepare but, still I’m telling you quickly. Beat the 2 eggs with salt, onion and green chilly. Heat some oil in a frying pan. When the oil is hot, make omelette with the beaten egg. Put off the flame. Cut the Omelette into 1 inch square and keep aside.

STEP 2

Heat some oil in a pan and fry the potatoes and remove from fire.

STEP 3

Add Onion paste and fry until become golden brown. Now add ginger, garlic and some salt and saute again.

STEP 4

Add Tomato pureed turmeric powder, red chili powder and some sugar. Saute the masala until oil gets separated.

STEP 5

Make small Vada’s from the mixture and keep aside.

STEP 6

Now add the fried Potatoes and Omelette pieces, and mix them gently. Add some boiled water and cover it with a lid and wait for 8 to 10 mins.

STEP 7

Bring it to boil. Put off the flame. Add some Garam masala and stir.

STEP 8

Serve warm Omelette Curry with Rice or Roti.
