Pui Metuli or Malabar Spinach is very low in calories and fats (100 grams of raw leaves provide just 19 calories). INGREDIENTS
  • Tender Pui Metuli (Malabar Spinach Fruit), cut into ½ inch
  • 2 small size Mulo (Radish) cut in cubes
  • 7-8 Shim (Flat beans) cut into 1 inch pieces
  • 2 cup Begun (Brinjal) cut in cubes
  • 7-8 Minced green chilies
  • 2 Dry Chilies
  • ½ tsp Turmeric powder
  • ½ tsp Panch Phoron
  • Salt as per taste
  • Sugar as per taste
  • 3tbsp Muster oil

TIME REQUIRED : Less than 30 minutes

PROCEDURE

STEP 1

Heat oil in a pan, add dry chilies and panch phoron.

STEP 2

When starts to splutter add Pui Metuli, Mulo (Radish), Shim (Flat Beans) and green chilies. Then sauté for few minutes.

STEP 3

Add Begun, salt and turmeric powder and sauté for few minutes.

STEP 4

Add 2 cup of water and cover it with a lid and wait for 10 to 12 minutes.

STEP 5

At last mix some sugar as per taste. Switch off the flame and keep it covered and give a standing time of about 3 minutes and Pui Metuli chorcori is ready to serve.
