Pui Metuli Chorchori
Pui Metuli or Malabar Spinach is very low in calories and fats (100 grams of raw leaves provide just 19 calories). Nonetheless, it holds an incredibly good amount of vitamins, minerals, and antioxidants. Malabar spinach are rich sources of several vital carotenoid pigment anti-oxidants such as ß-carotene, lutein, zeaxanthin. Together, these compounds help act as protective scavengers against oxygen-derived free radicals and reactive oxygen species (ROS) that play a healing role in aging and various disease processes. - Tender Pui Metuli (Malabar Spinach Fruit), cut into ½ inch
- 2 small size Mulo (Radish) cut in cubes
- 7-8 Shim (Flat beans) cut into 1 inch pieces
- 2 cup Begun (Brinjal) cut in cubes
- 7-8 Minced green chilies
- 2 Dry Chilies
- ½ tsp Turmeric powder
- ½ tsp Panch Phoron
- Salt as per taste
- Sugar as per taste
- 3tbsp Muster oil
TIME REQUIRED : Less than 30 minutes
Heat oil in a pan, add dry chilies and panch phoron.
When starts to splutter add Pui Metuli, Mulo (Radish), Shim (Flat Beans) and green chilies. Then sauté for few minutes.
Add Begun, salt and turmeric powder and sauté for few minutes.
Add 2 cup of water and cover it with a lid and wait for 10 to 12 minutes.
At last mix some sugar as per taste. Switch off the flame and keep it covered and give a standing time of about 3 minutes and Pui Metuli chorcori
is ready to serve.
