No Bake Egg Nog Cheesecake Recipe

Eggnog is a staple around our house during the holiday season. We drink it plain, pour it over our oatmeal, blend it up with ice cream…this time I’ve combined it with one of my other favorite things – cheesecake! Not only is this treat delicious, it’s easy to make and it will leave your oven free for the rest of your holiday feast!
These tasty bites are great to bring to a holiday party (add a splash of Brandy to the mix if you’re headed to an adult only party). Mini Eggnog Cheesecakes
Ingredients
Crust
1.5 packs graham crackers
1 stick melted butter
2 tbs sugar
1/2 tsp cinnamon
Filling
2.5 8 oz packs cream cheese (room temperature)
1 14 oz can sweetened condensed milk
1/2 cup eggnog
1/4 – 1/2 cup Brandy (optional)
1 tsp vanilla
1/4 tsp cinnamon
1/4 tsp nutmeg
Whipping cream + sugar to taste
Recipe
For the crust: crush graham crackers into very fine crumbs – I used the food processor, but you could put them in a plastic bag and crush them with a rolling pin. Stir in cinnamon, sugar and then the butter.For the filling: Using a mixer and a large mixing bowl beat cream cheese until smooth. Slowly add in sweetened condensed milk, then the eggnog and then the Brandy (if using). Toss in the cinnamon and nutmeg.
Assembly
Line up your metallic baking cups and fill each about 1/2 way with cheesecake mixture, then add 1/2 tablespoon of graham cracker mixture to each cup, top the with more cheesecake. To finish add a dollop of whip cream to the top and sprinkle with any leftover graham cracker crumbs.
Chill the cups in the refrigerator for about an hour before serving.
Note: this is not a firm cheesecake, it will be fairly soft.
