This Homemade Carrot Cake Recipe With Rich Cream Cheese Is A Show-Stopping Classic Fit To Take Center Stage On Easter Sunday

Everyone has been waiting to enjoy spring fruits and veggies all winter long. So, for your upcoming Easter celebration, what better way is there to celebrate the arrival of spring than with seasonal produce featured in a show-stopping, centerpiece-worthy dessert?

TikToker Lulu (@lulusloveforfood) is sharing a homemade carrot Cake recipe with cream cheese frosting that she has perfected just in time for Easter.

Some carrot cakes can be overly sweet, but this one has the ideal balance of flavors that makes it taste fresh, fruity, and warm.

In a mixing bowl, combine four eggs, one and three-fourth cups of sugar, one and one-third cups of vegetable oil, two teaspoons of vanilla extract, and two teaspoons of cinnamon. Make sure to stir well.

Next, add two cups of grated carrots, one cup of chopped walnuts, and three-fourths cup of crushed pineapple. You can shred fresh carrots by hand or buy a bag of shredded carrots at the supermarket.

The chopped walnuts and crushed pineapple are optional, but it is not recommended to leave the crushed pineapple out of the recipe. It gives the cake extra flavor and moisture, which makes it a super important ingredient, especially since the cake is naturally dense.

Then, add two and a half cups of flour, two teaspoons of baking soda, and a teaspoon of kosher salt.

Mix everything thoroughly. Afterward, pour the batter evenly into two round eight to nine-inch baking pans lined with parchment paper. Bake them in the oven at 350 degrees Fahrenheit for 42 to 48 minutes.

While the cakes are baking, start working on the cream cheese frosting. Combine 12 ounces of cream cheese at room temperature, a stick of butter also at room temperature, a teaspoon of vanilla extract, and two and a quarter cups of powdered sugar. Blend the ingredients with a hand mixer until the frosting is of a smooth, creamy consistency.

When the cakes are done baking, let them cool down for a bit before cutting the tops of the cakes to create smooth layers so that they will sit on top of each other evenly.

Spread the frosting between the cake layers and on the exterior of the cake itself.

Finally, crumble the leftover scraps cut from the tops of the cakes and arrange the crumbs in a ring around the cake.
